What’s the history of Chaz 51 Bistro and how would you describe your cuisine?
Chaz 51 Bistro is a family-owned and operated high-end restaurant with incredible steaks, seafood and Southern hospitality. The number “51” in our name was derived from the birthdates of our family members divided by five at the time of starting our business. We serve lunch, dinner and accommodate young guests with a children’s menu. We also have a takeout menu and we can accommodate larger groups for social gatherings and other special events.
Where are you originally from and what’s your history in Florida?
I’m originally from Cap-Haitien, Haiti which is the northern part of the country and famous for its French colonial architecture. I’ve been in Florida most of my life.
Is it true your original interest was architecture?
Yes, my original plan was to own the worlds’ best architect firm, but I found my next passion in the restaurant business and I love it.
Many locals and seasonal visitors rave about your steaks, burgers, lobster dishes, and fresh fish entrees. What are some of your favorite meals to make?
First ingredient in all my recipes is passion, then fresh herbs and seasonings to create bold flavors. I enjoy cooking anything fresh from the farm, garden, ocean, etc. to the dinner table.
Your wife Andrea shares your passion for cooking and good times with friends. What are some of your favorite meals at home and who does most of the cooking?
We enjoy Andrea’s meals immensely, so she does most of the cooking. I mostly do major holidays and large family gatherings.
